Loaded with the goodness of ghee and flavours of aromatic desi spices, Chef Kunal Kapur's Nei Choru recipe is a must-try for a comforting culinary experience. 

Yummy Ghee Rice

• 3 tbsp ghee • 15 cashew nuts • A handful of raisins • 2 bay leaves • 2 star anise • 2 black cardamom • 8 cloves • 1 cinnamon • 2 tsp fennel seeds • 1 cup onion slices • 3 green chillies • 1 tbsp ginger paste • 3 cups water • Salt • 1½ cup rice

• Heat ghee on a pan and saute cashew nuts and raisins till they turn brown. Transfer them to a bowl.

• Next, add more ghee and temper bay leaves, star anise, black cardamom, cloves, cinnamon, and fennel seeds. Saute onion slices till they become brown. Separate a couple of spoons of fried onions in a small bowl.

• In the next step, add green chillies, ginger paste, and water to the pan and boil fried onions for some time.

• After a few minutes, add salt and soaked rice. Also, add ghee-fried cashew nuts and raisins and mix everything well.

• Boil all ingredients in high heat till water reduces and rice cooks well. Cover the pan with a lid and cook.

Serve Nei Choru hot, garnish with fried onions, and savour the deliciousness.
