Amp up your foodie diaries this festive season by preparing a decadent Rasmalai Cheesecake Tub at home. Chef Saloni Kukreja has shared its recipe. 

Festive-Special Dessert

For Rasmalai Chenna: • 1l toned milk • 1.5 tbsp vinegar+3 tbsp water • 2 tsp cornflour For Sugar Syrup: • 1 cup sugar • 4 cups water • 3-4 cardamom pods

For Milk Mixture: • 1.5 cups milk • 3 tbsp sugar • 3 tbsp milk powder • 6-7 saffron strands • 1/2 tsp cardamom powder • 2 tsp rose water For Cheesecake Layer: • 1/2 cup cream cheese • 1/4 cup hung curd • 2-3 tbsp rasmalai milk mixture • 1/2 tsp cardamom powder • 1 tbsp caster sugar To Garnish: • pistachio powder

• To make chenna at home, boil milk and cool down for about 5 minutes. Next, add a solution of vinegar and water to curdle it and strain it gently afterwards.  

Step 1

• Wash curdled milk with water, squeeze excess water, and strain for at least half an hour. In the next step, knead chenna with cornflour to get a smooth texture. Form small rounded shapes and keep them aside.

• To make sugar syrup, boil water with sugar and cardamom pods. After sugar dissolves, add chenna balls and boil for 10 minutes. Make sure to cover the pot.

• Transfer them to a bowl of ice cubes and water quickly and let them cool down for some time. Next, put the ras malai into a fridge for half an hour. 

Step 4

• Once you are done with these steps, take a pan and add milk, sugar, and milk powder. Mix well and boil for some time and add saffron and cardamom powder. Turn off the gas and add rose water.

• Now comes the last step of preparation. To make the cheesecake filling, add cream cheese to a bowl and mix it with hung curd, rasmalai milk mixture, cardamom powder, and caster sugar. Transfer the yummy mixture into a piping bag to assemble the dessert.

• Start by placing ras malai pieces into the serving container and layering them with milk mixture. Follow this step once again and add a thick layer of cheesecake filling and refrigerate for an hour.
