Do not worry about counting calories as Chef Saloni Kukreja's Ragi Cake is a healthy dessert. The best part is it can be made on a gas using a pressure cooker.
To make the cake: • 6 tbsp ragi flour • 6 tbsp whole wheat flour • ½ cup jaggery powder • 2 tbsp cocoa powder • ½ tsp baking soda • 1 tsp baking powder • ⅛ tsp Salt • 3 tbsp • 2 tbsp curd • 1/2 tsp coffee powder • 1 tsp vinegar • ¼ cup hot water • ¼ cup milk

For Coffee Milk Soak: • 1 tsp coffee powder • ½ cup milk • 2 tbsp fresh cream • 2 tsp honey For Greek Yogurt Topping: • ⅓ cup Greek yoghurt • 1½ tbsp cocoa powder • 3 tsp honey

• The first and most important step is to remove the pressure cooker lid's whistle. Pour salt into the cooker and form a layer. Put a small lid inside as a boundary between the cooker base and the mould. Preheat it on medium-high heat for about 10 minutes.
• Meanwhile, add jaggery powder and coffee powder in a bowl and dissolve these in hot water.

• Take a separate bowl and mix curd with baking soda. After a few minutes, add oil and coffee-jaggery concoction, and mix nicely.

• Next, pour ragi flour, whole wheat flour, cocoa powder, baking powder, baking soda, and salt.

• Add milk and mix gently to get a lump-free and smooth batter. Also, add vinegar and mix for the last time. Transfer the freshly made batter to a preferred greased mould and cook for at least 50 minutes on low heat.

• Meanwhile, mix warm milk with coffee powder, fresh cream, and honey and keep it in the refrigerator.

• Add Greek yoghurt, cocoa powder, and honey to make Greek yoghurt topping.

After the ragi cake cools down slightly, drizzle both coffee milk and Greek yoghurt topping. Dust cocoa powder on the delectable dessert and enjoy.
