What's better than feeling the most comfortable in the winter season by gorging on a warm bowl of Coconut Curry Noodles? Chef Saloni Kukreja has a recipe to cook this mouth-watering delicacy at home.
• 1/2 a block of paneer • 1 tsp chilli Oil • 6-7 cashews • 2 stalks of green onion • 1/2 a carrot • 1/4th of a pepper • 1/2 cup mushroom • 4 cloves grated garlic • 1 inch grated ginger • 1 tbsp soy sauce • 1- 1.5 tbsp chilli paste or chilli sauce • 1 tbsp vinegar • 1/2 tbsp sugar • 1 tsp coriander powder • 1/4th cup water • 1 stock cube • 1/2 cup coconut milk + 1/2 tsp of cornstarch • 50-80g noodles • Sesame seeds

• Add oil to a heated pan and saute crumbled paneer pieces till they change colour. Next, add green onion, chilli oil and cashews, and cook for some time.
• Transfer cooked paneer to a bowl and saute mushrooms in that pan. Also, cook peppers, carrots, and grated ginger for a few minutes and add a stock cube and water.

• Pour chilli paste/ chilli sauce, soy sauce, sugar, and vinegar and coat the veggies gently. Next, add the mixture of coconut milk and cornstarch and cook on low heat.

• Meanwhile, boil noodles in a pan and keep it ready.
• Once the vegetables are cooked well, start plating. Serve boiled noodles with yummy curry and crunchy paneer.
