Nidhi's Tomato Chutney Recipe

Nidhi Bothra shared a yummy recipe for Roasted Tomato Chutney and you'd want to take notes. Have this while fasting during Navratri.

Ingredients 

1 tbsp of oil 2-3 green chilies , slit 4 medium tomatoes , halved 1 inch ginger , peeled 1 tbsp of cilantro with tender stems , finely chopped 5-6 mint leaves 1 tsp of salt 1 tsp of roasted cumin powder 1 ½ tsp of sugar 1 tsp of water 2 tsp of lemon juice , adjust to taste Tadka: 2 tsp of oil 1 tsp of cumin seeds 5-6 curry leaves

Step 1 

First, heat oil in a pan and add half cut tomatoes, green chillies and a piece of ginger in it. Cover it with a lid and let it roast.

After awhile, flip the tomatoes and let them cook on the other side. You can remove the peels of the tomatoes once they soften.

Step 2 

Crush cilantro, salt, sugar, jeera and mint leaves with a mortar and pestle. Add a little water while crushing it.

Step 3

Then, add the roasted romatoes, green chillies and ginger into the mortar pestle and crush them as well.

Step 4

Squeeze a little lemon juice into the freshly made chutney. And finish it off with a tadka of curry leaves and cumin seeds. Your Roasted Tomato Chutney is ready!
