Brinjal Curd Asafoetida or Hing Cumin seeds Kalonji Fenugreek seeds Wild celery seeds Fennel seeds Red chilli powder Salt Oil

Step 1: Make hung curd with the help of a muslin cloth. Make sure to not get rid of the water completely as it helps to cook the baingan later.

Wash the brinjal nicely and cut it into circular pieces. Marinate with some oil, panch phoran and hing and keep it aside.

Heat a pan and fry the marinated brinjal on low flame. Don't overcook it.

Now add red chilli powder, panch phoran and salt to the hung curd and mix well.

Add the spiced-up dahi to the pan and cook everything well. And it’s done!
