Chef Aruna Vijay shared a high-protein Lauki Ke Gatte recipe that is made with leftover rice and it looks all things amazing.
¾ cup grated lauki ¾ cup boiled rice ½ cup grated tofu or paneer ¼ tsp turmeric powder ½ tbsp red chilli powder Salt Chopped coriander ⅓ cup besan ½ cup whole-wheat flour 1 tsp cumin seeds 1 chopped green chilli For tempering - 1.5 tsp oil ½ tsp mustard seeds 10-12 curry leaves 1 green chilli ¼ tsp turmeric powder 1 tsp red chilli powder Salt 1 tsp lemon juice Chopped coriander 1 tsp sesame seeds
1. In a bowl, take the leftover rice along with some grated lauki. 2. Then, add some grated tofu, turmeric powder, red chilli powder, salt, chopped coriander, besan, whole-wheat flour, jeera, and chopped chilli.
3. Mix to make a dough. 4. Form log-like shapes as shown.
5. Steam them for at least 15 - 20 mins. 6. Once done, cut them into small pieces.
7. Heat oil in a pan. 8. Add mustard, cumin, turmeric, red chilli powder, and salt, along with the lauki ke gatte.
9. Drizzle some lemon juice and mix well. 10. Take it off the heat, garnish with freshly chopped coriander and sesame seeds, and you Lauki Ke Gatte are ready to be served and enjoyed!
