• 3 tbsp oil • 1/2 tsp mustard seeds • 1/2 tsp urad dal • 1/4 tsp fenugreek seeds • 1 tsp cumin seeds • 1 sliced onion • 3 slit green chillies • 1 tbsp chopped ginger • 1 sprig curry leaves • 250 g chopped green brinjals • Salt • 1 tsp turmeric powder • 500 ml whisked curd • Water • Coriander leaves

• Heat oil on a pan and temper mustard seeds. Next, saute urad dal, fenugreek seeds, and cumin seeds.

• Fry onions, green chillies, chopped ginger, and curry leaves for about a minute.

• Next add chopped green brinjals, salt, and turmeric powder. Cover the pan and cook for at least 10 minutes on medium-low heat. Add some water if needed.

• Once brinjals have softened, let the preparation cool down. Mix cooked brinjal with whisked curd. And some salt according to your taste preference.
