1 cup of quinoa (soaked for 4-5 hrs) 1/2 cup of mixed Moong dal and 1/2 cup of urad dal ( soaked for 4-5 hrs) 1 tsp of Methi/ fenugreek seeds (soaked for 4-5 hrs) Salt to taste 100 ml of water 1 medium onion (finely chopped) 1 small capsicum (finely chopped) 1 small carrot (finely chopped) 1 tbsp of Parsley/ coriander (finely chopped) 1/4 cup of crumbled paneer Salt to taste Red chilli flakes Oregano Oil to cook

First, blend the soaked dal, quinoa and methi with small amount of water to make a smooth batter.

Let this batter ferment overnight. Next morning, add salt and mix well.

Take a bowl and add the finely chopped veggiesand crumbled paneer into it with the spices and keep this filling aside.

Then, oil the toaster and add a ladle of quinoa dal batter into it. Then, add the filling on the top and cover it with another ladle of batter.

Let it cook on medium flame till it's golden brown on both sides. Your Quinoa Paneer Sandwich is ready! Cut into halves and enjoy with green chutney.
