Loaded with crisp Wai Wai and chilli oil, Nepali Pani Puri is a flavour bomb. Here's a nice recipe by Anjali Dhingra.

-2 potatoes - Chilli powder -Salt -Turmeric powder - 1 packet of Wai Wai noodles -Chilli flakes -Sesame seeds -Oil -Garlic cloves (mashed) -Puris -Spiced mint water (paani)

First, boil the potatoes. This is the first step to make the filling.

Once the boiled potatoes cool down, cut them into small cubes and add chilli powder, salt and turmeric powder. Keep it aside.

Then, empty the dry Wai Wai noodles into a bowl and mix it with the spice mix.

In another bowl, add crushed garlic, chilli powder, sesame seeds and add hot oil and mix well. You can squeeze lemon in it.

Finally, make the pani puri by filling it with the potato filling, Wai Wai noodles mix, coarse chilli oil masala and dunk it in the spiced water. Your Nepali Pani Puri is ready!
