Instagram chef Johnny Morillo shared a recipe for Thai Mango Salad, a plant-based take.

2 mangoes (thinly sliced) 1 sweet onion (julienned/shredded) 3-4 cherry tomatoes 1 red bell pepper (julienned) 1/4 cup of fresh mint (chopped) 1/4 cup of roasted peanuts (crushed) 2 tbsp of fried shallots (optional, for garnish) 2 tablespoons lime juice (freshly squeezed) 1 tbs vegan fish sauce 1 tbs palm sugar (or agave syrup) 1 small green chilli (finely chopped)

First peel the mangoes and julienne them. Add the mangoes into a bowl with the rest of the veggies.

Then, take a small bowl and whisk together vegan fish sauce, sugar, chilli, lime juice and sesame oil.

Pour the dressing over the salad and mix well.

Then, add the chopped cilantro and mint and toss all the ingredients together.

Then, top the salad with crushed peanuts and fried shallots to play with textures. Your Thai Mango Salad is ready!
