If you love savouring dal chawal for lunch, try this pumpkin dal recipe shared by Mounika Erukulapati (@indiancuisinecorner) on Instagram.
• 1/2 cup toor dal • 1 cup chopped pumpkin • 2 chopped tomatoes • 1 chopped onion • 3 green chillies • Salt • 1/2 tsp turmeric powder • Water • 1/4 cup tamarind juice • 1 tbsp red chilli powder • 2 tbsp ground nut oil • 1/2 tsp mustard seeds • 1/2 tsp cumin seeds • 1/2 tsp split urad dal • 1 sprig of curry leaves • 4 crushed garlic pods • A pinch of asafoetida • 3 dry red chillies

• Add soaked toor dal, pumpkin, tomatoes, onion, green chillies, salt, turmeric powder, and water to a pressure cooker.
• Cook till you get three whistles.

• Next, add tamarind juice and red chilli powder to the cooked dal and cook for a couple of minutes.

• Temper mustard seeds, cumin seeds, split urad dal, curry leaves, garlic pods, asafoetida, and red chillies in ground nut oil and pour the tadka into the dal. The healthy pumpkin dal is ready to relish.
Serve homemade delicious pumpkin dal with steamed rice and papad. Drizzle some ghee on top and enjoy.
