Dal Pakwan Recipe

Ingredients 

🔺2 cups of Maida/ All purpose flour (400g) 🔺3 tbsp of Sooji/ Semolina (25g) 🔺3 tbsp of Atta/ whole Wheat flour (45g) 🔺1/2 tsp Jeera/ Cumin seeds 🔺1/2 tsp of Ajwain/ Carom seeds 🔺1/2 tsp kooti hui Kali mirch/ Crushed Black pepper 🔺2 tbsp of Oil 🔺Salt to taste 🔺Oil for deep frying 🔺1 cup of Chana Dal/ Split chickpea lentil 🔺1/4th of cup Moong Dal/ skinned green lentil 🔺Salt to taste 🔺1/2 tsp of haldi/ Turmeric 🔺2-3 tbsp of Ghee/ Clarified butter 🔺1 tsp of  Jeera/ Cumin seeds 🔺1/4th tsp of Hing/ Asafoetida 🔺3-4 Hari mirch/ Green chilli 🔺1 inch Adhrak/ Ginger 🔺Curry leaves 🔺1 tsp of  Kashmiri red chilli powder 🔺1 tsp of Garam masala

Step 1 

Pressure cook overnight soaked chana dal and moong dal with salt and haldi for 3 to 4 whistles.

Make a tadka with ghee, hing, cumin seeds, ginger, curry leaves, haldi, chilli powder and garam masala.

Step 2 

Add the sizzling tadka to the freshly prepared dal and let it simmer and combine.

Step 3

For the pakwan, make a dough with sooji, water, atta, jeera, oil, salt and black pepper.

Step 4

Roll the dough and make larger sized round shapes. Then, poke holes using fork for the pakwan to absorb the dal.

Step 5

Deep fry the pakwan in hot oil like you would do for papad.

Pour hot dal over the crispy pakwan and enjoy the Sindhi dish. Garnish with chutneys, chopped tomatoes, onions, coriander and sev!
