In North India, winter is the season of green vegetables, and one of the most loved vegetables is ‘bathua’.
Chef Saransh Goila took to Instagram to share a recipe for Bathua Raita, which is the perfect way to include the green veggie in your diet.
2 bunches Bathua 250g curd 2 green chillies 8 garlic cloves Add the bathua 1 tbsp peppercorns 1 tbsp toasted jeera Salt
1. Take the curd in a bowl and whisk till it gets smooth and creamy.
2. Pluck the bathua leaves & clean it well. 3. Then, take green chillies, garlic, and bathua in a pan with some water and let it boil for 3-4 minutes.
4. Strain and let it cool down. 5. Transfer to a mixer and blend into a coarse paste
6. Take 4 tbsp of bathua paste and mix with the curd. 7. Crush some toasted peppercorns and jeera and add 1 tbsp of the masala to the curd mix along with some salt.
8. Add some water to adjust the consistency of the raita and mix well. 9. For some extra flavour, smoke the raita with coal.
And that’s it, your Bathua Raita is ready! You can enjoy it as is or add a tadka to elevate the flavours even more!
