If you are travelling to Lucknow soon, you must try mouth-watering makhan malai. Stores all around the city sell this delicious dessert. If you wish to make it at home, here's a recipe.

• Start by making a smooth mixture of cold milk, full-fat cream, and a few drops of lemon juice. Mix it continuously for a few minutes and let it refrigerate overnight.

• Next, add sugar, keora water, rose water, cardamom powder, and a few strands of saffron to the milk mixture and blend everything well. It is advisable to use a hand blender for a creamy, dense, and frothy consistency.

• You can also add a few drops of yellow food colour for the authentic colour.
