– 4-6 paya (cleaned and prepared) – 2 large onions (finely chopped) – 4 garlic cloves – 2-inch ginger piece – Whole spices: 2 cinnamon sticks, 4 cardamom pods, 3 cloves – Salt to taste – 1 tsp turmeric powder – 1 tsp red chilli powder – 1 tsp garam masala – Fresh coriander leaves – Water

Roast paya until golden brown in a heavy-bottomed pot.
