Mahima Dhoot recently shared a recipe for Coriander Pachadi from Andhra Pradesh which goes great with rice.

- Oil - 1/2 tsp of hing - 1 tsp of mustard seeds -1/2 tsp of methi seeds - 6-7 dried red chillies -1 inch tamarind -2 cups of chopped coriander -1-2 tsp of jaggery powder

First, heat oil in a pan and add hing, methi seeds and mustard seeds and let them splutter.

Then, add the dried chillies and tamarind and roast well.

Once the spices and red chllies are roasted well, add the chopped coriander leaves, salt and jaggery powder and let this cook till the leaves wilt.

Once it cooks, set it aside to cool. And then grind this using a mortar and pestle.

Finally, serve the Coriander Pachadi with hot rice and a little ghee and enjoy!
