Chef Aruna Vijay recently shared a recipe for high-protein Mexican Taquitos that are easy to make and absolutely delicious.
1 tsp oil 1 inch chopped ginger 3 cloves chopped garlic 1 large finely chopped onion 1 cup vegetables of choice Salt to taste 1 tsp chilli flakes 1 tsp oregano 1 tsp black pepper powder 2 tbsp chopped walnuts 100g grated tofu ½ tbsp tomato ketchup Tortillas Water & flour mixture

1. In a pan add in oil, ginger, garlic and onion, and saute them well.
2. Then, add in all the veggies with some chilli flakes, oregano, salt, pepper powder, tofu, chopped walnuts, and tomato ketchup. 3. Mix it all well.
4. To assemble, take a tortilla and add the prepared mixture in the centre. 5. Apply the flour and water mixture around the boundaries to seal it.
6. Place the taquitos in the air fryer. 7. Brush some oil and cook it until golden and crispy on top
And that’s it, your high-protein Mexican Taquitos are ready! Garnish them with mayonnaise and coriander, and enjoy!
