2 radishes 2 red carrots 50g of ginger (50 grams) 15-16 medium spicy green chilies Whole spices - to be toasted and coarsely powdered 1 1/2 Tsp Saunf (fennel seeds) 1 teaspoon Jeera (cumin) 1 teaspoon Mustard seeds 1 teaspoon Yellow Mustard 1 teaspoon Coriander seeds ½ teaspoon Methi Dana (fenugreek seeds) Powdered spices 1 teaspoon Garam Masala 1 tablespoon Red Chilli powder ½ teaspoon Haldi 1 teaspoon Kalonji (nigella seeds) 1 teaspoon sugar Salt to taste

First, cut carrots and radishes into batons, ginger into small pieces and slit green chillies and add them into a large bowl.

Dry roast the whole spices and cool them. Later, turn the spices into powder.

Add the powdered spices to the bowl with veggies along with salt and sugar.

Heat mustard oil to smoking point and pour it in the bowl with spiced veggies.

Add vinegar, give it a good mix and bottle it. Your Instant Pickle with winter veggies is ready!
