Chef Aruna Vijay shared a Kerala-special Bread & Stew on Instagram and it is the perfect weekend indulgence.
1 cinnamon stick 2 cloves 3-4 black peppercorns Sliced medium sized onion ½ inch finely chopped ginger 2 slit green chilli 1 chopped potato 1 chopped carrot ½ cup chopped beans ½ cup green peas ¾ cup thin coconut milk ½ cup thick coconut milk ½ tsp black pepper powder 2 sprigs of curry leaves ½ cup water Salt Coconut oil

1. Heat some oil in a pan and add some cinnamon, cloves, and peppercorns to it. 2. Sauté until fragrant. 3. Then, add a sprig of curry leaves, ginger, and green chillies. 4. Next, add onion and sauté until translucent.
5. Add the remaining veggies, except potatoes and green peas, and sauté. 6. Then add 2 cups of water and the thin coconut milk.
7. Cover the pan and cook on low flame. Once it starts boiling, add the peas. 8. Once the vegetables are cooked, add in the cubed boiled potatoes and let it simmer.
9. Now, add the thick coconut milk and let the gravy simmer on low heat. 10. Top it with pepper powder & salt.
11. Swirl the pan once and cook for another 2 minutes on a low flame. 12. Garnish with curry leaves and enjoy with bread.
