Egg Varuval or Muttai Varuval is a delicious semi-dry meaty dish from Tamil Nadu. Made of onions and dry herbs, Shivangi Dubey shared her Egg Varuval recipe.

-2 tbsp of coriander seeds -1 tbsp of black pepper -1 tbsp of urad dal -3 to 4 garlic pods -curry leaves -dry red chilli -oil -eggs -mustard seeds -salt

First, dry roast urad dal, black pepper, coriander seeds, curry leaves and garlic pods for a few minutes.

Then, add dry red chillies and roast for another 2 minutes. Let the spices cool and then grind it.

Take a kadai and heat oil. After this, add urad dal, curry leaves and mustard and let it sputter.

Then, add chopped eggs and mix it well with the masala. Once the eggs get a light brown coating, add 3 tbsp of the masala.

Finally, add salt as per your liking, mix well and your Egg Varuval is ready! Enjoy with rice or rotis.
