Chef Neha Deepak Shah took to Instagram to share an amazing Udon Noodle Soup recipe that is perfect for the winter season.
1 tbsp chilli garlic sauce 1 tbsp peanut butter 2 tbsp light soy sauce 4-5 garlic cloves 1 spring onion (Whites & Green Separate) 1 tsp grated ginger Oil 500 ml water 1 pack Udon Noodles Tofu Bok Choy Carrots Broccoli Mushroom Edamame Spring Onion Sesame Seeds Chillies

1. Combine some chilli garlic sauce, peanut butter, and light soy sauce.
2. In a saucepan, heat oil & saute some chopped ginger, garlic & spring onion. 3. Add water & soup base & let it boil.
4. Now, add the cooked udon noodles and let them boil in the soup base for a few minutes.
5. Blanch the veggies to make the noodle soup healthy
6. To assemble, pour the noodle soup into a bowl and top it with some veggies, spring onion, chillies, and sesame seeds.
And that’s it! Your spicy Udon Noodle Soup is ready to be served and enjoyed!
