Chef Kunal Kapur took to Instagram to share a recipe for Mangalorean-style Ghee Roast Mushrooms, and it’s a must-try.
12 dry Kashmiri red chillies 2 tbsp coriander seeds ½ tbsp jeera 1 tbsp fennel seeds Chopped ginger 3 cloves garlic Ghee 5 tbsp chopped onion Curry leaves 15 whole mushrooms Water Turmeric Lemon Salt Chopped coriander leaves

1. Take 12 dry and deseeded Kashmiri chillies, coriander seeds, jeera, and fennel seeds in a pan and toast them. 2. Let it cool & put them in a blender.
3. In the blender, add some roughly chopped ginger, a few cloves of garlic, and about ½ cup of water. 4. Mix till you get a fine paste.
5. Now, take 2-3 tbsp of ghee in a pan and add some chopped onion and curry leaves as well. Stir fry it for a few minutes. 6. Then, add the chilli paste to it and bring it all together. 7. Cook for 4-5 minutes.
8. Add 15 washed whole mushrooms to the pan. 9. Then add ½ tsp turmeric powder and salt to taste. 10. Roast it well and toss occasionally.
11. Add a sprig of curry leaves, lemon juice, and chopped coriander leaves to the dish. 12. Give it a good toss.
And that’s it! Your Mangalorean-style Ghee Roast Mushrooms are ready to be enjoyed with some Malabar paratha.
