If you have leftover rotis at home, we have found a delicious way to eat them!
Digital creator Moksha (@butter.street) shared a Cheesy Spinach & Mushroom Quesadillas recipe made with leftover rotis and you need to try it out as well.
2 tsp butter 3 tbsp garlic 1 tsp chilli flakes 1 cup chopped button mushrooms 2 cups chopped spinach Salt Pepper 2 tsp maida 1/2 cup milk 1 cheese slice 1 tsp oregano (optional) Mozzarella cheese (optional)

1. Heat some butter in a pan and saute garlic and chilli flakes for a minute.
2. Next, add some chopped mushrooms and spinach. 3. Season with salt and pepper (to taste). 4. Cook for a few minutes.
5. Now, add some maida and saute for a few seconds. 6. Then, add milk, cheese, and oregano, and mix well.
7. In a pan, place one leftover roti and spread the spinach and mushroom mixture on it. 8. Add some mozzarella cheese and top it with another roti.
9. Cook until the roti becomes crisp and slightly brown on both sides. 4. Cut into slices & drizzle with chilli oil.
