The ingredients for this include – pimento, carrots, thyme, ginger, scotch bonnet, white potato, onion, chicken, scallion, garlic, and curry powder.

The first step is to marinate the chicken with all the ingredients, except potatoes and carrots.

Now, heat the oil in a large pot and add onion and peppers. After this, cook them down for 5 minutes to soften.

Now, add the chicken and cook for 10 minutes and brown all sides.

Now stir in the coconut milk or chicken broth. Add potatoes and carrots to the mix!
