Unlike its name Plastic Chutney doesn't contain plastic. Rather, the raw papaya in it resembles plastic. Check out this recipe by Binita Das.

-250g of green papaya, thinly sliced -250g of water -200g sugar -½ tbsp of lime juice -¼ tsp of salt -½ tsp of carom seeds (Ajwain)

First, blanch the papaya pieces in a pot of boiling water for 1.5 minutes. Then, drain the water and place the pieces into an ice bath for 10 minutes.

Add sugar and water into a saucepan and bring it into a low simmer.

Then, add the drained papaya into the sugar syrup and cook it on medium-low heat for 25 minutes till the papayas are tender and the syrup thickens.

Add salt as per your requirement and lime juice and give it a good mix.

Then, switch off the heat and add the hand-crushed carom seeds. You can refrigerate it and have it cold like a jam. Your Plastic Chutney is ready.
